Ingredients:
- 2 large apples (approx. 300g), peeled and diced
- 1 tsp (2.6g) ground cinnamon
- 2 tbsp (25g) granulated sugar
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 0.5 tsp (3g) salt
- 1 tsp (2.6g) ground cinnamon
- 0.5 cup (113g) unsalted butter, melted and cooled
- 0.75 cup (150g) packed brown sugar
- 0.25 cup (50g) granulated sugar
- 2 large eggs, room temperature
- 0.5 cup (120g) Greek yogurt or sour cream
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper with an overhang.
- In a medium bowl, toss the diced apples with 2 tablespoons of sugar and 1 teaspoon of cinnamon. Set aside to macerate.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and remaining cinnamon.
- In a separate bowl, whisk the melted butter with the brown and granulated sugars. Add eggs one at a time, followed by Greek yogurt and vanilla extract. Whisk until smooth.
- Gently fold the dry ingredients into the wet ingredients using a spatula until just combined. Do not overmix. Fold in half of the spiced apple mixture.
- Pour half of the batter into the prepared pan. Top with the remaining cinnamon apples. Pour the rest of the batter over the apples and use a knife to gently swirl.
- Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
