  • 2 cups (480ml) beef or chicken stock (homemade or low-sodium)
  • 1 tablespoon (15ml) Worcestershire sauce
  • 1 teaspoon (5g) salt (or to taste)
  • 1/2 teaspoon (2g) ground black pepper
  • Optional: Fresh herbs (like thyme or rosemary) for added flavour

Instructions:

  1. In a medium saucepan over medium heat, melt the unsalted butter until frothy.
  2. Add the flour, whisking continuously for about 2 minutes until it turns a light golden color (this is your roux).
  3. Gradually pour in the stock while whisking to prevent lumps from forming.
  4. Stir in Worcestershire sauce, salt, and pepper, cooking until the gravy thickens (about 10-15 minutes). Optional: Add fresh herbs for extra flavor.
  5. If gravy is too thick, whisk in a bit more stock or water until the desired consistency is reached.
  6. Taste and adjust seasoning if needed, then ladle over your favourite dish.
