Ingredients:
- 9 cups Chex Rice Cereal
- 1 cup Semi-Sweet Chocolate Chips
- 1/2 cup (1 stick) Unsalted Butter, cut into cubes
- 1/2 cup Creamy Peanut Butter
- 1 teaspoon Pure Vanilla Extract
- 3 cups Powdered Sugar (Icing Sugar)
Instructions:
- Measure the 9 cups of Chex cereal and place them gently into the extra-large mixing bowl. Set aside. Measure the 3 cups of powdered sugar and pour it into your large resealable bag or airtight container.
- Combine the chocolate chips, cubed butter, and creamy peanut butter in a microwave-safe bowl (or saucepan).
- Heat in 30-second intervals in the microwave, stirring well between each interval, until the mixture is smooth and glossy. Stir in the vanilla extract until fully incorporated.
- Pour the warm chocolate mixture evenly over the measured cereal in the large mixing bowl. Use a rubber spatula to gently fold the cereal into the coating. Work quickly but carefully to cover as much cereal as possible without crushing the squares.
- For the most even coating, divide the coated cereal mixture into two equal halves. Add the first half of the coated cereal into the bag or container containing the powdered sugar. Seal tightly, ensuring air remains inside.
- Shake the bag enthusiastically for 60–90 seconds until every piece of cereal is completely coated in white powder. Transfer the finished first batch to a parchment-lined baking sheet.
- Repeat the coating process with the second half of the cereal and the remaining powdered sugar.
- Spread the coated Muddy Buddies in a single layer and allow the mixture to cool completely at room temperature for at least 30 minutes, or speed it up with 15 minutes in the fridge, until the coating sets firmly and prevents stickiness.
