Ingredients:
- ½ medium green cabbage, finely shredded (about 4 cups; 300g)
- 2 large carrots, grated (about 1 cup; 120g)
- ½ red bell pepper, thinly sliced (optional; for colour and sweetness)
- ½ cup mayonnaise (120ml)
- 2 tablespoons apple cider vinegar (30ml)
- 1 tablespoon sugar (12g)
- 1 teaspoon Dijon mustard (5g)
- Salt and freshly ground black pepper, to taste
Instructions:
- Finely shred the cabbage, grate the carrots, and optionally slice the red bell pepper.
- In a mixing bowl, combine mayonnaise, apple cider vinegar, sugar, and Dijon mustard. Whisk until smooth and well blended. Season with salt and pepper to taste.
- In a large bowl, combine the shredded cabbage, carrots, and bell pepper. Pour the dressing over the vegetables.
- Toss until the vegetables are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Give the slaw a gentle toss before serving. Enjoy!
