Ingredients:

  • ½ medium green cabbage, finely shredded (about 4 cups; 300g)
  • 2 large carrots, grated (about 1 cup; 120g)
  • ½ red bell pepper, thinly sliced (optional; for colour and sweetness)
  • ½ cup mayonnaise (120ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 tablespoon sugar (12g)
  • 1 teaspoon Dijon mustard (5g)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Finely shred the cabbage, grate the carrots, and optionally slice the red bell pepper.
  2. In a mixing bowl, combine mayonnaise, apple cider vinegar, sugar, and Dijon mustard. Whisk until smooth and well blended. Season with salt and pepper to taste.
  3. In a large bowl, combine the shredded cabbage, carrots, and bell pepper. Pour the dressing over the vegetables.
  4. Toss until the vegetables are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Give the slaw a gentle toss before serving. Enjoy!
