Ingredients:

  • 1 pound (450g) fresh white fish fillets (such as tilapia or sole), skin removed, cut into small cubes
  • 1 cup (240ml) fresh lime juice (about 8-10 limes)
  • 1 small red onion, thinly sliced
  • 1-2 fresh jalapeño peppers, deseeded and finely chopped (adjust to taste)
  • 1/2 cup (15g) fresh cilantro, chopped
  • Salt to taste
  • Black pepper to taste
  • 1 cup (150g) cooked sweet potato, cubed (optional)
  • 1 cup (30g) corn kernels (fresh, frozen, or canned)
  • Tortilla chips or plantain chips (for serving)

Instructions:

  1. Cube the fresh fish fillets into bite-sized pieces.
  2. In a mixing bowl, combine the fish with lime juice. Ensure it's fully submerged—add more juice if needed. Cover and refrigerate for 30 minutes.
  3. After marination, add the sliced red onion, chopped jalapeños, and cilantro. Season with salt and pepper to taste, gently folding everything together.
  4. Serve in bowls, garnished with cubed sweet potato and corn if desired. Add tortilla or plantain chips on the side for crunch.
