- 1 cup (240ml) fresh lime juice (about 8-10 limes)
- 1 small red onion, thinly sliced
- 1-2 fresh jalapeño peppers, deseeded and finely chopped (adjust to taste)
- 1/2 cup (15g) fresh cilantro, chopped
- Salt to taste
- Black pepper to taste
- 1 cup (150g) cooked sweet potato, cubed (optional)
- 1 cup (30g) corn kernels (fresh, frozen, or canned)
- Tortilla chips or plantain chips (for serving)
Instructions:
- Cube the fresh fish fillets into bite-sized pieces.
- In a mixing bowl, combine the fish with lime juice. Ensure it's fully submerged—add more juice if needed. Cover and refrigerate for 30 minutes.
- After marination, add the sliced red onion, chopped jalapeños, and cilantro. Season with salt and pepper to taste, gently folding everything together.
- Serve in bowls, garnished with cubed sweet potato and corn if desired. Add tortilla or plantain chips on the side for crunch.
