Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 2 cups (240g) all-purpose flour
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract (optional for added flavor)
  • Extra granulated sugar for sprinkling

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Gradually add the flour and salt, mixing until combined.
  4. Form the dough into a disc and wrap in plastic wrap; chill in the refrigerator for 30 minutes.
  5. Roll out the chilled dough to about ½ inch thickness on a floured surface.
  6. Cut into desired shapes using a cookie cutter or knife, and place on a baking sheet lined with parchment paper.
  7. Sprinkle a little granulated sugar over the tops of the cookies.
  8. Bake for 15-20 minutes, until edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
