Ingredients:
- 2 lbs (900g) English cucumbers, peeled and seeded
- 1 cup (245g) Greek yogurt, plain and chilled
- 1/4 cup (60ml) extra-virgin olive oil
- 2 tbsp (30ml) fresh lemon juice
- 1 small shallot (30g), minced
- 1 clove (5g) garlic, smashed
- 1 tbsp (15ml) extra-virgin olive oil
- 1 tbsp (4g) fresh dill leaves
- 1/2 tsp (3g) flaky sea salt
- 1 tbsp (15g) diced cucumber
Instructions:
- Slice the cucumbers in half lengthwise. Use a spoon to scrape out the watery seeds and roughly chop the seeded cucumbers into 1 inch chunks. Note: Removing seeds prevents the soup from separating later.
- Place the chopped cucumbers, Greek yogurt, olive oil, lemon juice, shallot, and garlic into a high speed blender.
- Pulse several times to break down solids.
- Blend on high for 30–60 seconds until smooth and velvety.
- Pour the soup into an airtight glass container.
- Refrigerate for 2 hours until thoroughly chilled. Note: This is the window where the garlic mellows out.
- Stir the soup once before serving to re incorporate the emulsion.
- Garnish with olive oil, fresh dill leaves, flaky sea salt, and diced cucumber.
