Ingredients:
- 1 lb cooked shrimp, peeled, deveined, and cut into bite-sized pieces
- 8 oz imitation crab, chopped into ½ inch pieces
- 16 oz rotini or fusilli pasta
- 1 cup celery, finely diced
- ½ cup red onion, finely minced
- ½ cup red bell pepper, diced
- ¼ cup fresh parsley, chopped
- ½ cup mayonnaise
- ¼ cup Italian dressing
- 1 tbsp fresh lemon juice
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions:
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until just al dente (usually 1 minute less than package directions). Immediately drain in a colander and rinse under cold running water until the noodles are chilled to the touch. Set aside.
- In a small bowl, whisk together the mayonnaise, Italian dressing, lemon juice, garlic powder, salt, and pepper until the mixture is velvety and uniform in color.
- In a large mixing bowl, combine the chilled pasta, chopped shrimp, imitation crab, celery, red onion, and bell pepper.
- Pour the dressing over the mixture and fold gently with a spatula until every component is glistening and evenly coated. Fold in the fresh parsley last.
- Chill the salad in the refrigerator for at least 1 hour to allow flavors to marry before serving.
