Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 cup (100g) breadcrumbs (preferably panko for extra crunch)
- 1/2 cup (50g) grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray (or 2 tablespoons olive oil)
Instructions:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper (if using).
- In a shallow dish, whisk eggs and set aside. In a large mixing bowl, combine breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
- Tenderize chicken breasts to an even thickness (about 1 inch). Dip each chicken breast into the egg, then coat with the breadcrumb mixture, pressing lightly to adhere.
- Place breaded chicken breasts on the prepared baking sheet. Lightly spray or brush tops with olive oil. Bake in preheated oven for 20-25 minutes until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
- Remove from oven and let rest for a few minutes. Serve with your favorite sides.
