Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1 cup (100g) breadcrumbs (preferably panko for extra crunch)
  • 1/2 cup (50g) grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray (or 2 tablespoons olive oil)

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper (if using).
  2. In a shallow dish, whisk eggs and set aside. In a large mixing bowl, combine breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  3. Tenderize chicken breasts to an even thickness (about 1 inch). Dip each chicken breast into the egg, then coat with the breadcrumb mixture, pressing lightly to adhere.
  4. Place breaded chicken breasts on the prepared baking sheet. Lightly spray or brush tops with olive oil. Bake in preheated oven for 20-25 minutes until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  5. Remove from oven and let rest for a few minutes. Serve with your favorite sides.
