Ingredients:
- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 ounces penne pasta
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup frozen peas (optional)
Instructions:
- Dice chicken breasts; season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken; sauté until golden brown and cooked through (about 6-8 minutes). Remove and set aside.
- In the same skillet, add broth and bring to a boil. Add penne pasta and cook according to package instructions (about 10 minutes), stirring occasionally.
- Reduce heat; add minced garlic and Italian seasoning to the pasta. Stir for 1 minute. Pour in heavy cream, mixing well. Bring to a gentle simmer.
- Stir in cooked chicken, peas (if using), and both cheeses until melted and combined.
- Taste and adjust seasoning if necessary. Serve hot and enjoy!
