Ingredients:

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 ounces penne pasta
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup frozen peas (optional)

Instructions:

  1. Dice chicken breasts; season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken; sauté until golden brown and cooked through (about 6-8 minutes). Remove and set aside.
  3. In the same skillet, add broth and bring to a boil. Add penne pasta and cook according to package instructions (about 10 minutes), stirring occasionally.
  4. Reduce heat; add minced garlic and Italian seasoning to the pasta. Stir for 1 minute. Pour in heavy cream, mixing well. Bring to a gentle simmer.
  5. Stir in cooked chicken, peas (if using), and both cheeses until melted and combined.
