Ingredients:
- 1.5 pounds (680 g) boneless, skinless chicken breasts
- 2 tablespoons (30 mL) olive oil
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- Salt and pepper to taste
- 2 large sweet yellow bell peppers, sliced
- 1 medium yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon (5 g) dried oregano
- 1 tablespoon (15 mL) balsamic vinegar (optional)
- Fresh parsley, chopped (optional)
Instructions:
- Trim the chicken breasts and pat dry. Season with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through. Remove and keep warm.
- In the same skillet, add sliced onions and yellow peppers. Sauté for about 5 minutes until they begin to soften. Stir in minced garlic and dried oregano, cooking for an additional 2 minutes until fragrant.
- Return the chicken to the skillet and pour in balsamic vinegar if using. Toss to combine and heat through for 2-3 minutes.
- Garnish with fresh parsley if desired and serve warm.
