Ingredients:
- 3 cups fresh corn kernels or 2 cans (15 oz each) of sweet corn, drained
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup all-purpose flour
- ½ cup unsalted butter, melted
- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs
- Additional shredded cheese for topping
- Chopped fresh chives or parsley for garnish
Instructions:
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine the fresh corn, sour cream, melted butter, and eggs, whisking until well mixed.
- In a separate bowl, mix the flour, baking powder, garlic powder, salt, and pepper.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the shredded cheese, reserving a bit for topping if desired.
- Pour the mixture into a greased 9x13 inch baking dish.
- Bake for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven, allow to cool for a few minutes, then garnish with fresh herbs if using.
