Ingredients:

  • 3 cups fresh corn kernels or 2 cans (15 oz each) of sweet corn, drained
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • Additional shredded cheese for topping
  • Chopped fresh chives or parsley for garnish

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the fresh corn, sour cream, melted butter, and eggs, whisking until well mixed.
  3. In a separate bowl, mix the flour, baking powder, garlic powder, salt, and pepper.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently fold in the shredded cheese, reserving a bit for topping if desired.
  6. Pour the mixture into a greased 9x13 inch baking dish.
  7. Bake for 30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven, allow to cool for a few minutes, then garnish with fresh herbs if using.
