Ingredients:
- 1 cup (2 sticks) Unsalted Butter, melted and cooled
- 1 ½ cups Light Brown Sugar, packed
- ½ cup Granulated Sugar
- 2 Large Eggs, room temperature
- 1 Tbsp Vanilla Extract
- 2 ¼ cups All-Purpose Flour
- 1 tsp Baking Soda
- ½ tsp Kosher Salt
- 1 ½ cups M&M Candies, divided
Instructions:
- Preheat the oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper, allowing an overhang on the two longer sides.
- Gently melt the butter and allow it to cool slightly (it should not be hot).
- In a large bowl, whisk the cooled melted butter with both the brown and granulated sugars until smooth.
- Beat in the eggs one at a time until fully incorporated. Stir in the vanilla extract.
- In a separate small bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
- Gently fold 1 cup of the M&Ms into the dough.
- Cover the bowl and chill the dough for 30 minutes (recommended for thicker bars).
- Press the chilled dough evenly into the prepared 9x13 inch pan. Scatter the remaining ½ cup of M&Ms evenly over the top of the dough, pressing them in lightly.
- Bake for 25–30 minutes. The edges should be golden brown, and the centre should look set but still slightly soft. Do not overbake.
- Remove from the oven and allow the bars to cool completely in the pan for at least 60 minutes before lifting them out using the parchment overhang and slicing into 16 even bars.
