Ingredients:

  • 1/2 cup (120 ml) apple cider vinegar
  • 1/2 cup (100 g) brown sugar
  • 2 tablespoons (30 ml) soy sauce
  • 1 tablespoon (15 ml) fish sauce
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 teaspoon (5 g) onion powder
  • 1 teaspoon (5 g) garlic powder
  • 1/2 teaspoon (2 g) ground allspice
  • 1/2 teaspoon (2 g) ground cloves
  • 1/2 teaspoon (2 g) black pepper
  • 1/4 teaspoon (1 g) cayenne pepper
  • 1 teaspoon (5 g) Worcestershire sauce (optional)

Instructions:

  1. In a mixing bowl, whisk together the apple cider vinegar and brown sugar until the sugar dissolves.
  2. Stir in the soy sauce and fish sauce until well integrated.
  3. In a separate bowl, combine the Dijon mustard, onion powder, garlic powder, allspice, cloves, black pepper, cayenne pepper, and Worcestershire sauce (if using).
  4. Gradually mix the dry ingredients into the vinegar mixture, whisking to ensure everything is evenly distributed.
  5. Sample your sauce and adjust seasoning if necessary, adding more cayenne for heat or sugar for sweetness.
  6. Pour the mixture into an airtight container and refrigerate for at least 1 hour to allow flavors to meld.
  7. Use within a month. Shake well before each use.
