Ingredients:
- 1/2 cup (120 ml) apple cider vinegar
- 1/2 cup (100 g) brown sugar
- 2 tablespoons (30 ml) soy sauce
- 1 tablespoon (15 ml) fish sauce
- 1 tablespoon (15 ml) Dijon mustard
- 1 teaspoon (5 g) onion powder
- 1 teaspoon (5 g) garlic powder
- 1/2 teaspoon (2 g) ground allspice
- 1/2 teaspoon (2 g) ground cloves
- 1/2 teaspoon (2 g) black pepper
- 1/4 teaspoon (1 g) cayenne pepper
- 1 teaspoon (5 g) Worcestershire sauce (optional)
Instructions:
- In a mixing bowl, whisk together the apple cider vinegar and brown sugar until the sugar dissolves.
- Stir in the soy sauce and fish sauce until well integrated.
- In a separate bowl, combine the Dijon mustard, onion powder, garlic powder, allspice, cloves, black pepper, cayenne pepper, and Worcestershire sauce (if using).
- Gradually mix the dry ingredients into the vinegar mixture, whisking to ensure everything is evenly distributed.
- Sample your sauce and adjust seasoning if necessary, adding more cayenne for heat or sugar for sweetness.
- Pour the mixture into an airtight container and refrigerate for at least 1 hour to allow flavors to meld.
- Use within a month. Shake well before each use.
