Ingredients:
- 1 (6 ounce) package cranberry flavored Jell-O gelatin (170g)
- 2 cups boiling water (475ml)
- 1 cup cold water (235ml)
- 1 (14 ounce) can whole berry cranberry sauce (397g)
- 1 (11 ounce) can mandarin oranges, drained (312g)
- 1/2 cup chopped pecans (50g)
- 1/4 cup chopped celery (25g)
- 1/4 cup reserved Mandarin juice
- 4 ounces cream cheese, softened (113g)
- 2 tablespoons granulated sugar (25g)
- 1/2 teaspoon vanilla extract (2.5ml)
- 2 tablespoons milk (30ml)
Instructions:
- In a large bowl, dissolve the cranberry Jello in boiling water. Stir until completely dissolved (about 2 minutes).
- Stir in the cold water. Then, add reserved mandarin juice.
- Gently stir in the cranberry sauce, mandarin oranges, pecans, and celery. Make sure everything is evenly distributed.
- Pour the mixture into a 9x13 inch dish (or serving bowl). Cover with plastic wrap and refrigerate for at least 2-3 hours, or until completely set. The Jello should be firm and not jiggly.
- While the Jello is chilling, prepare the cream cheese topping (if using). In a small bowl, beat the softened cream cheese with sugar and vanilla extract until smooth and creamy. Gradually add the milk until you reach a spreadable consistency.
- Once the Jello is set, spread the cream cheese topping evenly over the top. (Or serve each slice with a dollop.) Cut into squares and serve chilled.
