Ingredients:
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 1 (15 ounce) can sweet corn, drained
- 1/4 cup chopped fresh chives
- 1/4 teaspoon cayenne pepper (optional)
Instructions:
- Heat olive oil in a large skillet over medium heat. Add mushrooms, salt, and pepper. Cook until softened and browned, about 8-10 minutes.
- Stir in onion and garlic. Cook until softened and fragrant, about 2-3 minutes.
- In a mixing bowl, beat together cream cheese, sour cream, and mayonnaise until smooth.
- Stir in Parmesan cheese until combined.
- Fold in the drained corn and the sautéed mushroom mixture.
- Stir in chives and cayenne pepper (if using). Heat through over low heat, stirring occasionally, until warmed through (about 5 minutes).
- Serve warm with tortilla chips, crackers, or vegetables.
