Ingredients:

  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 (15 ounce) can sweet corn, drained
  • 1/4 cup chopped fresh chives
  • 1/4 teaspoon cayenne pepper (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add mushrooms, salt, and pepper. Cook until softened and browned, about 8-10 minutes.
  2. Stir in onion and garlic. Cook until softened and fragrant, about 2-3 minutes.
  3. In a mixing bowl, beat together cream cheese, sour cream, and mayonnaise until smooth.
  4. Stir in Parmesan cheese until combined.
  5. Fold in the drained corn and the sautéed mushroom mixture.
  6. Stir in chives and cayenne pepper (if using). Heat through over low heat, stirring occasionally, until warmed through (about 5 minutes).
  7. Serve warm with tortilla chips, crackers, or vegetables.
