Ingredients:

  • 12 ounces (340 g) Fresh Cranberries
  • 3/4 cup (150 g) Granulated Sugar
  • 1/4 cup (60 ml) Water
  • 1 teaspoon finely grated Orange Zest
  • 2 cups (480 ml) Heavy Whipping Cream
  • 2 tablespoons Confectioner’s Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 3 cups Mini Marshmallows
  • 1 (20 ounce) can Tinned Crushed Pineapple, drained exceptionally well
  • 1/2 cup (60 g) Pecans or Walnuts, roughly chopped and lightly toasted

Instructions:

  1. Prepare Relish: Combine the cranberries, granulated sugar, and water in a medium saucepan. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until most cranberries have burst and the mixture has thickened slightly, resembling a chunky jam. Remove from the heat, stir in the orange zest, and transfer the relish to a shallow dish. Refrigerate until completely cold (crucial step).
  2. Prepare Add-ins: Toast the chopped nuts in a dry frying pan over medium heat for 3-5 minutes until fragrant. Set aside to cool. Open the crushed pineapple and press it firmly into a fine-mesh sieve or cheesecloth to drain off all excess liquid. Ensure the pineapple is as dry as possible.
  3. Whip the Cream: In a large, chilled bowl, combine the heavy cream, confectioner’s sugar, and vanilla extract. Whip using an electric mixer on medium-high speed until firm peaks form.
  4. Fold in Flavors: Gently fold the completely cooled cranberry relish into the whipped cream until just combined, creating a streaked, pink color. Add the well-drained pineapple, mini marshmallows, and the cooled, toasted nuts. Using a rubber spatula, fold everything together until uniformly incorporated, taking care not to deflate the cream.
  5. Chill and Set: Transfer the Cranberry Fluff Salad to a serving bowl or airtight container. Cover and refrigerate for a minimum of 4 hours (preferably overnight) to allow the flavors to marry and the marshmallows to soften slightly.
  6. Serve: Give the salad one last gentle stir just before serving. Garnish with extra toasted nuts, fresh cranberries, or orange slices if desired.
