Ingredients:

  • 4 tablespoons (57g) unsalted butter
  • 1 1/2 cups (360ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese, freshly grated
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
  • Pinch of nutmeg (optional)

Instructions:

  1. In a medium saucepan over medium-low heat, melt the butter until it's completely liquid but not browned.
  2. Pour in the heavy cream and whisk to combine with the melted butter.
  3. Bring the mixture to a very gentle simmer, stirring occasionally. You don't want it to boil!
  4. Reduce the heat to low. Gradually add the grated Parmesan cheese, whisking constantly until the cheese is melted and the sauce is smooth and creamy.
  5. Season with salt, pepper, and a pinch of nutmeg (if using). Taste and adjust seasonings as needed.
  6. Toss with your favorite cooked pasta and serve right away.
