Ingredients:
- 4 tablespoons (57g) unsalted butter
- 1 1/2 cups (360ml) heavy cream
- 1 cup (100g) grated Parmesan cheese, freshly grated
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon black pepper, or to taste
- Pinch of nutmeg (optional)
Instructions:
- In a medium saucepan over medium-low heat, melt the butter until it's completely liquid but not browned.
- Pour in the heavy cream and whisk to combine with the melted butter.
- Bring the mixture to a very gentle simmer, stirring occasionally. You don't want it to boil!
- Reduce the heat to low. Gradually add the grated Parmesan cheese, whisking constantly until the cheese is melted and the sauce is smooth and creamy.
- Season with salt, pepper, and a pinch of nutmeg (if using). Taste and adjust seasonings as needed.
- Toss with your favorite cooked pasta and serve right away.
