Ingredients:

  • 8 oz (227 g) feta cheese, crumbled
  • 1/2 cup (120 ml) Greek yogurt
  • 1/4 cup (60 ml) extra-virgin olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)
  • 2 tablespoons fresh parsley, chopped
  • Freshly cracked black pepper, to taste
  • Extra drizzle of olive oil (for garnish)
  • Fresh herbs (dill, parsley, or mint) for garnish

Instructions:

  1. Gather all ingredients and equipment. Measure out the feta cheese, Greek yogurt, and herbs.
  2. In a medium mixing bowl, add crumbled feta and Greek yogurt.
  3. Mash the feta and yogurt together using a fork or mixer until creamy and combined.
  4. Stir in olive oil, minced garlic, lemon juice, dill, parsley, and black pepper until well mixed.
  5. Taste and adjust seasoning with more lemon juice or pepper if desired.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Remove from fridge, drizzle with olive oil, and garnish with extra herbs before serving.
