Ingredients:
- 1 cup stone-ground grits (250g)
- 4 cups water (950ml)
- 1 teaspoon salt (5g), plus more to taste
- 1 cup whole milk (240ml)
- 2 tablespoons unsalted butter (30g)
- 1 cup shredded sharp cheddar cheese (100g)
- Freshly cracked black pepper, to taste
- Optional: 1 tablespoon chopped fresh chives or parsley, for garnish
Instructions:
- In a medium saucepan, bring 4 cups of water to a boil.
- Stir in 1 teaspoon of salt.
- Gradually whisk in the stone-ground grits to prevent clumping.
- Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally until grits are tender. Grits should be thick and creamy.
- Stir in whole milk and butter, mixing until fully incorporated.
- Add the shredded cheddar cheese, stirring until melted and creamy.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh chives or parsley if desired.
