Ingredients:

  • 1 cup stone-ground grits (250g)
  • 4 cups water (950ml)
  • 1 teaspoon salt (5g), plus more to taste
  • 1 cup whole milk (240ml)
  • 2 tablespoons unsalted butter (30g)
  • 1 cup shredded sharp cheddar cheese (100g)
  • Freshly cracked black pepper, to taste
  • Optional: 1 tablespoon chopped fresh chives or parsley, for garnish

Instructions:

  1. In a medium saucepan, bring 4 cups of water to a boil.
  2. Stir in 1 teaspoon of salt.
  3. Gradually whisk in the stone-ground grits to prevent clumping.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally until grits are tender. Grits should be thick and creamy.
  5. Stir in whole milk and butter, mixing until fully incorporated.
  6. Add the shredded cheddar cheese, stirring until melted and creamy.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh chives or parsley if desired.
