Ingredients:
- 2 lbs (900g) yellow summer squash, sliced into ¼ inch rounds
- 1 medium (150g) yellow onion, finely diced
- 3 tbsp (42g) unsalted butter
- 1 can (10.5 oz / 298g) cream of mushroom soup
- ½ cup (120g) sour cream
- 4 oz (113g) cream cheese, softened
- 1 large egg, beaten
- 1 tsp (5g) garlic powder
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 1 cup (115g) sharp cheddar cheese, shredded
- 1 sleeve (approx. 1.5 oz / 42g) buttery crackers, crushed
- 2 tbsp (28g) unsalted butter, melted
Instructions:
- Melt 3 tbsp of butter in a large skillet over medium heat. Add the diced onion and sliced yellow squash.
- Cook, stirring occasionally, for 8–10 minutes until the squash is tender, translucent, and the released liquid has mostly evaporated.
- Remove from heat and let the vegetables cool for 5 minutes.
- In a large mixing bowl, whisk together the cream of mushroom soup, sour cream, softened cream cheese, and beaten egg until smooth.
- Stir in the garlic powder, salt, and pepper.
- Gently fold the sautéed squash and onions into the cream mixture until evenly coated.
- Pour the mixture into a 9x9 inch baking dish and spread level with a spatula.
- Sprinkle the shredded cheddar cheese evenly over the top of the squash.
- Toss the crushed crackers with melted butter in a small bowl and sprinkle the mixture over the cheese.
- Bake in a preheated oven at 350°F (175°C) for 25–30 minutes until the edges are bubbling and the topping is deep golden brown.
