Ingredients:

  • 1/2 cup raw cashews, soaked in hot water for 30 mins
  • 1/4 cup extra virgin olive oil
  • 1/4 cup filtered water
  • 2 cups packed fresh basil leaves
  • 2 tbsp fresh lemon juice
  • 1 medium garlic clove, peeled
  • 1 tsp maple syrup
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp nutritional yeast

Instructions:

  1. Combine the soaked cashews, olive oil, lemon juice, and maple syrup in the blender. Pulse on high until the mixture is completely smooth and resembles a thick, white cream.
  2. Add the fresh basil leaves, garlic clove, nutritional yeast, salt, and pepper. Blend on medium-high just until the sauce turns a vibrant, uniform emerald green.
  3. While the blender is running on low, slowly drizzle in the filtered water one tablespoon at a time until the dressing reaches a glossy, pourable consistency that coats the back of a spoon.
