Ingredients:

  • 2 pounds chicken wings, split at the joint
  • 2 tablespoons baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup unsalted butter
  • ½ cup hot sauce
  • 1 tablespoon honey

Instructions:

  1. Pat the chicken wings dry using paper towels.
  2. Place wings in a large bowl and add baking powder, garlic powder, onion powder, paprika, salt, and pepper. Toss to coat evenly.
  3. Lay the wings on a baking sheet lined with parchment and refrigerate for at least 30 minutes to help them dry out.
  4. Preheat your oven to 425°F (220°C).
  5. Arrange wings in a single layer on the rack of the baking sheet. Bake for 25 minutes, then flip and bake for another 20-25 minutes until golden and crispy.
  6. In a small saucepan, melt butter over low heat. Stir in hot sauce and honey until well combined.
  7. Remove wings from oven and toss in the prepared sauce until evenly coated. Optionally, return wings to the oven for an additional 5 minutes for a caramelised finish.
