- 1 medium yellow onion, peeled
- 1 large egg, lightly beaten
- 1/4 cup (30g) all-purpose flour
- 1 teaspoon salt

- Vegetable oil, for frying (approximately 1 cup or 240ml)
Instructions:
- Coarsely grate the potatoes and onion using a box grater or food processor.
- Place the grated potato and onion mixture in a clean kitchen towel or cheesecloth. Squeeze out as much liquid as possible. This is crucial for crispy latkes!
- In a large bowl, combine the squeezed potato and onion mixture, egg, flour, salt, and pepper. Mix well.
- Heat about 1/4-inch (0.6 cm) of vegetable oil in a large skillet over medium-high heat. The oil should be shimmering but not smoking.
- Drop spoonfuls of the potato mixture into the hot oil, forming small, flat patties (about 3 inches in diameter).
- Fry for 3-4 minutes per side, or until golden brown and crispy.
