Ingredients:
- 2 Large English Cucumbers (600g), sliced into 1/4-inch rounds
- 1 lb cherry tomatoes (450g), halved
- 1/2 medium red onion (55g), thinly shaved
- 1/2 tsp sea salt
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 clove garlic, minced
- 1 tsp Dijon mustard
- 1/2 tsp dried oregano
- 1/2 cup feta cheese (75g), crumbled
- Fresh basil leaves for garnish
- Black pepper to taste
Instructions:
- Place sliced cucumbers in a colander over a sink. Sprinkle with sea salt, toss, and let sit for 5 minutes to draw out excess moisture.
- In a small mason jar, combine olive oil, red wine vinegar, minced garlic, Dijon mustard, and dried oregano. Shake vigorously for 30 seconds until emulsified.
- Pat the cucumbers dry with a clean towel and transfer to a large bowl. Add cherry tomatoes and red onions.
- Pour the dressing over the vegetables and toss gently. Top with crumbled feta cheese and torn basil leaves before serving.
