Ingredients:

  • 2 Large English Cucumbers (600g), sliced into 1/4-inch rounds
  • 1 lb cherry tomatoes (450g), halved
  • 1/2 medium red onion (55g), thinly shaved
  • 1/2 tsp sea salt
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • 1/2 cup feta cheese (75g), crumbled
  • Fresh basil leaves for garnish
  • Black pepper to taste

Instructions:

  1. Place sliced cucumbers in a colander over a sink. Sprinkle with sea salt, toss, and let sit for 5 minutes to draw out excess moisture.
  2. In a small mason jar, combine olive oil, red wine vinegar, minced garlic, Dijon mustard, and dried oregano. Shake vigorously for 30 seconds until emulsified.
  3. Pat the cucumbers dry with a clean towel and transfer to a large bowl. Add cherry tomatoes and red onions.
  4. Pour the dressing over the vegetables and toss gently. Top with crumbled feta cheese and torn basil leaves before serving.
