Ingredients:

  • 2 medium zucchinis (about 300g each)
  • 1 cup all-purpose flour (120g)
  • 1 large egg
  • 1 cup breadcrumbs (100g)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil for frying

Instructions:

  1. Wash and slice zucchinis into 1/4-inch thick rounds.
  2. In separate shallow dishes, place the flour, beaten egg, and breadcrumbs mixed with garlic powder, onion powder, salt, and pepper.
  3. Dip each zucchini slice first in flour, then the egg, and finally coat with breadcrumbs, ensuring even coverage.
  4. Pour enough olive oil into your frying pan to cover the bottom evenly and heat over medium-high heat until shimmering.
  5. Add zucchini slices in batches; avoid overcrowding the pan. Fry until golden brown on both sides (about 2-3 minutes per side).
  6. Remove from the oil with a slotted spoon and drain on paper towels. Transfer to a baking sheet if needed to keep warm.
