Ingredients:
- 2 medium zucchinis (about 300g each)
- 1 cup all-purpose flour (120g)
- 1 large egg
- 1 cup breadcrumbs (100g)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Olive oil for frying
Instructions:
- Wash and slice zucchinis into 1/4-inch thick rounds.
- In separate shallow dishes, place the flour, beaten egg, and breadcrumbs mixed with garlic powder, onion powder, salt, and pepper.
- Dip each zucchini slice first in flour, then the egg, and finally coat with breadcrumbs, ensuring even coverage.
- Pour enough olive oil into your frying pan to cover the bottom evenly and heat over medium-high heat until shimmering.
- Add zucchini slices in batches; avoid overcrowding the pan. Fry until golden brown on both sides (about 2-3 minutes per side).
- Remove from the oil with a slotted spoon and drain on paper towels. Transfer to a baking sheet if needed to keep warm.
