Ingredients:

  • 2 medium zucchinis, grated (about 2 cups or 200g)
  • 1 medium carrot, grated (about 1 cup or 100g)
  • 1 small onion, finely chopped (about 1/2 cup or 75g)
  • 2 large eggs, beaten
  • 1/2 cup (65g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1 cup (240ml) corn oil or canola oil (choose one for frying)

Instructions:

  1. Grate the zucchinis and carrot, then place them in a clean kitchen towel and squeeze to remove excess moisture.
  2. In a large bowl, combine grated vegetables, onion, beaten eggs, flour, baking powder, salt, pepper, and smoked paprika. Mix well until combined.
  3. In a frying pan, heat the chosen oil over medium heat until shimmering (about 350°F or 175°C).
  4. Spoon a tablespoon of the mixture into the hot oil and flatten slightly. Fry in batches, not overcrowding. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Use a slotted spoon to transfer fritters to paper towels, draining excess oil.
  6. Serve hot with dips like yogurt sauce or chutney.
