Ingredients:

  • 1.5 lbs ground beef (85/15 recommended)
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 3 large bell peppers, chopped into 1-inch pieces
  • 28 oz crushed tomatoes
  • 15 oz tomato sauce
  • 4 cups beef bone broth
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 2 cups cooked white rice

Instructions:

  1. In a large skillet over medium-high heat, brown the ground beef until it develops a deep crust. Add the diced onions halfway through and sauté until translucent. Drain excess grease.
  2. Transfer the beef and onion mixture to a 6-quart or larger slow cooker.
  3. Add the minced garlic, chopped bell peppers, crushed tomatoes, tomato sauce, beef bone broth, brown sugar, Worcestershire sauce, dried oregano, and smoked paprika to the pot.
  4. Stir ingredients well to combine. Cover and cook on High for 6 hours or Low for 8 hours until peppers are tender.
  5. Just before serving, stir in the pre-cooked white rice to heat through, ensuring the grains maintain their texture without becoming mushy.
