  1. Trim any large pieces of excess fat from the beef. Cut the meat evenly into 1-inch cubes. Lightly season cubes with salt and pepper in a bowl.
  2. Place the seasoned steak cubes evenly in the bottom of the slow cooker insert. Do not overcrowd.
  3. In a separate small bowl, whisk together the beef broth, Worcestershire sauce, soy sauce, minced garlic, thyme, rosemary, and onion powder.
  4. Dot the top of the steak cubes evenly with the pats of unsalted butter. Pour the liquid sauce mixture gently over the butter and steak.
  5. Secure the lid. Cook on LOW for 6–8 hours or on HIGH for 3–4 hours. Avoid lifting the lid during the cooking process.
  6. Check for tenderness. The steak should be fork-tender when done.
  7. Optional Thickening: If you prefer a slightly thicker gravy consistency, whisk together the cornstarch and cold water until smooth. Stir this slurry into the hot liquid in the slow cooker. Cook on HIGH for an additional 15–20 minutes, stirring occasionally, until the sauce thickens visibly.
  8. Stir everything gently to combine the sauce and meat before serving immediately, perhaps over mashed potatoes.
