Ingredients:

  • 8 slices white bread, crusts removed (80g)
  • 4 ounces (113g) cream cheese, softened
  • 1/4 cup (60 ml) mayonnaise
  • 2 tablespoons (30ml) fresh dill, finely chopped
  • 1 tablespoon (15ml) fresh chives, finely chopped
  • 1/4 teaspoon (1.5 ml) salt
  • 1/8 teaspoon (0.75 ml) black pepper
  • 1 English cucumber, thinly sliced (200g)

Instructions:

  1. In a mixing bowl, combine the softened cream cheese, mayonnaise, dill, chives, salt, and pepper. Mix well until smooth and creamy.
  2. Thinly slice the cucumber. If the cucumber has a lot of seeds, you can remove them.
  3. Spread a generous layer of the cream cheese mixture on four slices of bread.
  4. Arrange the cucumber slices neatly on top of the cream cheese spread.
  5. Place the remaining four slices of bread on top of the cucumber, cream cheese-side down.
  6. Wrap the sandwiches tightly in cling film and refrigerate for at least 30 minutes.
  7. Remove the sandwiches from the refrigerator. Using a sharp knife, carefully cut each sandwich in half diagonally. Serve immediately.
