Ingredients:

  • 2 lbs cucumbers, thinly sliced
  • ½ cup red onion, sliced into paper-thin half-moons
  • 1 tsp kosher salt
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp white vinegar
  • 1 tbsp fresh dill, finely chopped
  • ½ tsp garlic powder
  • ½ tsp granulated sugar
  • ¼ tsp cracked black pepper

Instructions:

  1. Toss the sliced cucumbers and red onions in a colander and sprinkle with the kosher salt. Let them sit for 30 minutes to draw out excess moisture, then rinse quickly with cold water and pat dry with a paper towel.
  2. In a large mixing bowl, combine the mayonnaise, sour cream, white vinegar, sugar, garlic powder, and black pepper. Whisk vigorously until the texture is smooth and the sugar has fully dissolved.
  3. Fold the chopped fresh dill into the dressing.
  4. Add the dried cucumbers and onions into the bowl and gently fold them into the dressing until every slice is evenly coated.
  5. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to merge and the onions to pickle slightly.
