Ingredients:
- 2 lbs cucumbers, thinly sliced
- ½ cup red onion, sliced into paper-thin half-moons
- 1 tsp kosher salt
- ½ cup mayonnaise
- ¼ cup sour cream
- 2 tbsp white vinegar
- 1 tbsp fresh dill, finely chopped
- ½ tsp garlic powder
- ½ tsp granulated sugar
- ¼ tsp cracked black pepper
Instructions:
- Toss the sliced cucumbers and red onions in a colander and sprinkle with the kosher salt. Let them sit for 30 minutes to draw out excess moisture, then rinse quickly with cold water and pat dry with a paper towel.
- In a large mixing bowl, combine the mayonnaise, sour cream, white vinegar, sugar, garlic powder, and black pepper. Whisk vigorously until the texture is smooth and the sugar has fully dissolved.
- Fold the chopped fresh dill into the dressing.
- Add the dried cucumbers and onions into the bowl and gently fold them into the dressing until every slice is evenly coated.
- Cover the bowl and refrigerate for at least 2 hours to allow the flavors to merge and the onions to pickle slightly.
