Ingredients:

  • 2 medium ripe avocados (approximately 300g / 10.5 oz), pitted
  • 1/2 cup unsweetened cocoa powder (50g / 1.75 oz)
  • 1/2 cup full-fat coconut milk (120ml / 4 fl oz), chilled
  • 1/4 cup erythritol or sweetener of choice (50g / 1.75 oz) (adjust to taste)
  • 1/4 cup water (60ml / 2 fl oz)
  • 1 teaspoon vanilla extract (5ml / 0.17 fl oz)
  • Pinch of sea salt
  • Sugar-free chocolate shavings (optional)
  • Chopped nuts (almonds, walnuts, pecans) (optional)
  • Berries (raspberries, strawberries) (optional)

Instructions:

  1. Halve, pit, and scoop out the avocado flesh.
  2. Combine avocado, cocoa powder, coconut milk, sweetener, water, vanilla extract, and salt in a blender.
  3. Blend until completely smooth and creamy, scraping down the sides as needed.
  4. Taste the mousse and adjust sweetness as desired.
  5. Spoon the mousse evenly into the muffin tin or silicone molds.
  6. Cover and chill in the refrigerator for at least 2 hours, or until firm.
  7. Gently remove the mousse bites from the molds.
  8. Garnish with sugar-free chocolate shavings, chopped nuts, or berries before serving.
