Ingredients:

  • 1 English cucumber (approx. 1 lb / 450g)
  • 1 tsp (6g) kosher salt
  • 1/2 cup (65g) all-purpose flour
  • 1 cup (100g) Panko breadcrumbs
  • 1/2 tsp (3g) garlic powder
  • 1/2 tsp (3g) paprika
  • 1/4 tsp (1.5g) black pepper
  • 2 large eggs
  • 1 tbsp (15ml) water
  • 2 cups (480ml) neutral oil

Instructions:

  1. Slice the English cucumber lengthwise into 1/4 inch (0.6cm) thick slices.
  2. Lay slices on paper towels and sprinkle with salt. Let them sit for 5 minutes to draw out excess water.
  3. Pat every slice completely dry with a fresh paper towel to ensure breading adheres.
  4. Set up the dredging station: Bowl 1 with flour, garlic powder, paprika, and black pepper; Bowl 2 with whisked eggs and water; Bowl 3 with Panko breadcrumbs.
  5. Dip each slice into the flour (shake off excess), then the egg wash, and finally press firmly into the Panko until fully coated.
  6. Heat oil to 375°F (190°C) and fry 4–5 slices at a time for 1–2 minutes per side until mahogany-colored and rigid.
  7. Remove slices with tongs and transfer immediately to a wire cooling rack. Lightly sprinkle with a pinch of salt.
