Ingredients:
- 1 English cucumber (approx. 1 lb / 450g)
- 1 tsp (6g) kosher salt
- 1/2 cup (65g) all-purpose flour
- 1 cup (100g) Panko breadcrumbs
- 1/2 tsp (3g) garlic powder
- 1/2 tsp (3g) paprika
- 1/4 tsp (1.5g) black pepper
- 2 large eggs
- 1 tbsp (15ml) water
- 2 cups (480ml) neutral oil
Instructions:
- Slice the English cucumber lengthwise into 1/4 inch (0.6cm) thick slices.
- Lay slices on paper towels and sprinkle with salt. Let them sit for 5 minutes to draw out excess water.
- Pat every slice completely dry with a fresh paper towel to ensure breading adheres.
- Set up the dredging station: Bowl 1 with flour, garlic powder, paprika, and black pepper; Bowl 2 with whisked eggs and water; Bowl 3 with Panko breadcrumbs.
- Dip each slice into the flour (shake off excess), then the egg wash, and finally press firmly into the Panko until fully coated.
- Heat oil to 375°F (190°C) and fry 4–5 slices at a time for 1–2 minutes per side until mahogany-colored and rigid.
- Remove slices with tongs and transfer immediately to a wire cooling rack. Lightly sprinkle with a pinch of salt.
