Ingredients:
- 3 ripe bananas, mashed (about 1 cup or 240g)
- 1/3 cup (80ml) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups (190g) all-purpose flour
- 1/2 cup (85g) chocolate chips or walnuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and grease the muffin tin or line with paper cups.
- In a large bowl, mash the ripe bananas until smooth (leave some chunks for texture if you like). Stir in the melted butter until well combined.
- Mix in the sugar, beaten egg, and vanilla extract until smooth.
- Sprinkle baking soda and salt over the mixture. Gradually add flour, stirring gently until just combined. Do not over-mix.
- If using, fold in chocolate chips or walnuts at this point.
- Distribute the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
- Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
