Ingredients:

  • 3 ripe bananas, mashed (about 1 cup or 240g)
  • 1/3 cup (80ml) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (85g) chocolate chips or walnuts (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease the muffin tin or line with paper cups.
  2. In a large bowl, mash the ripe bananas until smooth (leave some chunks for texture if you like). Stir in the melted butter until well combined.
  3. Mix in the sugar, beaten egg, and vanilla extract until smooth.
  4. Sprinkle baking soda and salt over the mixture. Gradually add flour, stirring gently until just combined. Do not over-mix.
  5. If using, fold in chocolate chips or walnuts at this point.
  6. Distribute the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.
  8. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
