Ingredients:

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ cup vegetable oil (or melted coconut oil)
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips (optional)
  • ½ cup raisins or dried cranberries (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grate the zucchini and place it on a clean cloth or paper towels. Squeeze to remove excess moisture.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a medium bowl, combine the granulated sugar, brown sugar, eggs, oil, and vanilla. Whisk until smooth.
  5. Add the wet ingredients to the dry ingredients. Fold until just combined.
  6. Gently fold in the grated zucchini and any optional add-ins (nuts, chocolate chips, etc.).
  7. Pour the batter into a greased loaf pan. Smooth the top.
  8. Place in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
