Ingredients:

  • 1 cup (240g) mashed sweet potatoes (cooked and cooled)
  • 1 cup (125g) all-purpose flour
  • 2 large eggs
  • 1/2 cup (120ml) milk (dairy or non-dairy)
  • 2 tablespoons (30g) unsalted butter, melted, plus extra for cooking
  • 2 tablespoons (25g) brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Instructions:

  1. Roast or boil sweet potatoes until tender, then cool and mash.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, whisk together mashed sweet potatoes, eggs, milk, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined (do not overmix).
  5. Preheat a frying pan or griddle over medium heat, adding a bit of butter to coat.
  6. Pour 1/4 cup of batter for each pancake onto the hot surface, cooking until bubbles form on the surface (about 2-3 minutes).
  7. Flip and cook for an additional 2 minutes or until golden brown.
  8. Serve immediately with maple syrup or desired toppings.
