Ingredients:
- 1 cup (240g) mashed sweet potatoes (cooked and cooled)
- 1 cup (125g) all-purpose flour
- 2 large eggs
- 1/2 cup (120ml) milk (dairy or non-dairy)
- 2 tablespoons (30g) unsalted butter, melted, plus extra for cooking
- 2 tablespoons (25g) brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
Instructions:
- Roast or boil sweet potatoes until tender, then cool and mash.
- In a mixing bowl, whisk together flour, baking powder, baking soda, spices, and salt.
- In another bowl, whisk together mashed sweet potatoes, eggs, milk, and melted butter.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined (do not overmix).
- Preheat a frying pan or griddle over medium heat, adding a bit of butter to coat.
- Pour 1/4 cup of batter for each pancake onto the hot surface, cooking until bubbles form on the surface (about 2-3 minutes).
- Flip and cook for an additional 2 minutes or until golden brown.
- Serve immediately with maple syrup or desired toppings.
