Ingredients:

  • 2 lbs (900g) Yukon Gold potatoes, peeled and quartered
  • 1 teaspoon sea salt, plus more to taste
  • 1/2 cup (120 ml) unsweetened plant-based milk (almond, soy, or oat milk)
  • 2 tablespoons vegan butter, plus more for serving
  • 1-2 tablespoons nutritional yeast (optional)
  • 1/4 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • Optional garnishes: chopped fresh chives, parsley, or dill

Instructions:

  1. Place potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil, then reduce heat and simmer until fork-tender, about 15-20 minutes.
  2. Drain the potatoes in a colander and return them to the empty pot.
  3. Add plant-based milk, vegan butter, nutritional yeast (if using), and garlic powder to the pot.
  4. Mash the potatoes with a potato masher or electric hand mixer until smooth and creamy, adjusting the amount of plant-based milk to reach your desired consistency.
  5. Season with salt and pepper to taste. Serve immediately, garnished with fresh herbs if desired.
