Ingredients:
- 2 lbs (900g) Yukon Gold potatoes, peeled and quartered
- 1 teaspoon sea salt, plus more to taste
- 1/2 cup (120 ml) unsweetened plant-based milk (almond, soy, or oat milk)
- 2 tablespoons vegan butter, plus more for serving
- 1-2 tablespoons nutritional yeast (optional)
- 1/4 teaspoon garlic powder
- Freshly ground black pepper, to taste
- Optional garnishes: chopped fresh chives, parsley, or dill
Instructions:
- Place potatoes in a large pot and cover with cold water. Add 1 teaspoon of salt. Bring to a boil, then reduce heat and simmer until fork-tender, about 15-20 minutes.
- Drain the potatoes in a colander and return them to the empty pot.
- Add plant-based milk, vegan butter, nutritional yeast (if using), and garlic powder to the pot.
- Mash the potatoes with a potato masher or electric hand mixer until smooth and creamy, adjusting the amount of plant-based milk to reach your desired consistency.
- Season with salt and pepper to taste. Serve immediately, garnished with fresh herbs if desired.
