Ingredients:
- 3 large overripe bananas (approx. 350g mashed)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 3/4 cup (150g) granulated sugar
- 1 large egg, room temperature and lightly beaten
- 1 teaspoon pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper, leaving an overhang on the sides.
- In a large mixing bowl, mash the peeled overripe bananas with a fork or potato masher until mostly smooth.
- Stir the melted butter into the mashed bananas. Mix in the granulated sugar, beaten egg, and vanilla extract until well combined.
- Sprinkle the baking soda, salt, and cinnamon over the wet mixture and stir. Gently fold in the flour with a spatula until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55 to 65 minutes. Test for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
- Cool in the pan for 10 minutes, then lift out using parchment handles and transfer to a wire rack to cool completely.
