Ingredients:

  • 3 large overripe bananas (approx. 350g mashed)
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, room temperature and lightly beaten
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line with parchment paper, leaving an overhang on the sides.
  2. In a large mixing bowl, mash the peeled overripe bananas with a fork or potato masher until mostly smooth.
  3. Stir the melted butter into the mashed bananas. Mix in the granulated sugar, beaten egg, and vanilla extract until well combined.
  4. Sprinkle the baking soda, salt, and cinnamon over the wet mixture and stir. Gently fold in the flour with a spatula until just combined, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes. Test for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  7. Cool in the pan for 10 minutes, then lift out using parchment handles and transfer to a wire rack to cool completely.
