Ingredients:

  • 1 lb ripe heirloom or vine tomatoes
  • 8 oz fresh mozzarella cheese
  • 1 bunch fresh basil leaves
  • 1/2 tsp flaky sea salt
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 tsp freshly cracked black pepper
  • 1 pinch granulated sugar

Instructions:

  1. Slice tomatoes into 1/4 inch thick rounds, arrange them on a plate, and sprinkle with flaky sea salt. Let them sit for 5-10 minutes to concentrate the flavor.
  2. Slice the mozzarella into rounds of similar thickness to the tomatoes.
  3. Wash and pat the basil leaves completely dry, keeping them whole or gently torn.
  4. On a platter, alternate slices of tomato, mozzarella, and a whole basil leaf in an overlapping shingle pattern.
  5. In a small jar, combine the olive oil, balsamic vinegar, pepper, and sugar. Shake vigorously until the mixture is opaque and emulsified.
  6. Spoon the dressing evenly over the assembled platter, ensuring each slice of mozzarella is touched by the balsamic.
