Ingredients:
- 1 lb ripe heirloom or vine tomatoes
- 8 oz fresh mozzarella cheese
- 1 bunch fresh basil leaves
- 1/2 tsp flaky sea salt
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1/4 tsp freshly cracked black pepper
- 1 pinch granulated sugar
Instructions:
- Slice tomatoes into 1/4 inch thick rounds, arrange them on a plate, and sprinkle with flaky sea salt. Let them sit for 5-10 minutes to concentrate the flavor.
- Slice the mozzarella into rounds of similar thickness to the tomatoes.
- Wash and pat the basil leaves completely dry, keeping them whole or gently torn.
- On a platter, alternate slices of tomato, mozzarella, and a whole basil leaf in an overlapping shingle pattern.
- In a small jar, combine the olive oil, balsamic vinegar, pepper, and sugar. Shake vigorously until the mixture is opaque and emulsified.
- Spoon the dressing evenly over the assembled platter, ensuring each slice of mozzarella is touched by the balsamic.
