Ingredients:

  • 500 g strong white bread flour
  • 1 teaspoon salt
  • 7 g fast action yeast
  • 1 tablespoon olive oil
  • 350 ml lukewarm water
  • 350 g passata
  • 300 g grated mozzarella
  • 2 teaspoons dried oregano
  • Black pepper to taste

Instructions:

  1. Preheat your oven to 230°C (210°C fan / gas mark 8 / 450°F). Grease pizza trays with olive oil.
  2. In a large bowl, combine flour, yeast, and salt. Add olive oil and gradually mix in lukewarm water until a dough forms.
  3. Transfer the dough to a floured surface and knead for 5 minutes until smooth.
  4. Divide the dough into 4 equal pieces (or 8 for smaller pizzas) and roll each piece out to fit the size of the trays.
  5. Place rolled dough onto the trays and stretch gently to fit. Spread 4 tablespoons of passata on each pizza base, leaving a small border. Top with grated cheese, oregano, and black pepper.
  6. Cook in the preheated oven for 10-15 minutes, rotating trays if necessary. Check for doneness—cheese should be bubbling and the crust golden brown.
  7. Allow to cool slightly before slicing and serving.
