Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 pound ground beef or turkey (optional for vegetarian version)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes (with juices)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper, to taste
  • 2 cups vegetable broth or water

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, garlic, and bell peppers; sauté until softened (about 5 minutes).
  3. Increase heat to medium-high and add ground beef or turkey. Cook until browned, breaking it apart with a spoon (about 5-7 minutes).
  4. Stir in kidney beans, black beans, diced tomatoes, chili powder, cumin, paprika, cayenne, and broth. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes, stirring occasionally.
  6. Taste and adjust seasoning as needed before serving.
