Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium red bell pepper, diced
- 1 medium green bell pepper, diced
- 1 pound ground beef or turkey (optional for vegetarian version)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes (with juices)
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper, to taste
- 2 cups vegetable broth or water
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add diced onion, garlic, and bell peppers; sauté until softened (about 5 minutes).
- Increase heat to medium-high and add ground beef or turkey. Cook until browned, breaking it apart with a spoon (about 5-7 minutes).
- Stir in kidney beans, black beans, diced tomatoes, chili powder, cumin, paprika, cayenne, and broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat to low. Cover and let simmer for 20-25 minutes, stirring occasionally.
- Taste and adjust seasoning as needed before serving.
