Ingredients:
- 1 cup (226g) 2% or Full-Fat Cottage Cheese (blended smooth)
- 1 cup (120g) Self-Rising Flour
- 1 Large Egg (lightly beaten, for egg wash)
- 1 Tbsp Everything Bagel Seasoning (or sesame/poppy seeds)
Instructions:
- Place the cottage cheese into a food processor and blend until completely smooth and creamy, resembling thick yogurt. Scrape down the sides as needed.
- In a large bowl, combine the smooth cottage cheese and the self-rising flour. Mix vigorously with a sturdy spoon or spatula until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface. Knead very gently for just 2–3 minutes until the dough comes together into a cohesive, slightly tacky ball. Do not overwork.
- Cover the dough ball loosely with a clean tea towel and let it rest at room temperature for 10 minutes.
- Divide the dough evenly into 6 portions. Roll each portion into a small log, then curve it into a ring shape, pinching the ends firmly together to seal the 'bagel'.
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the shaped bagels onto the sheet, ensuring they have space.
- Lightly brush the tops and sides of the bagels with the beaten egg. Immediately sprinkle generously with the Everything Bagel Seasoning.
- Bake for 20–22 minutes, rotating the tray halfway through, until the bagels are puffed, golden brown, and sound slightly hollow when tapped.
- Transfer the baked bagels to a wire rack immediately and allow them to cool completely before slicing and serving.
