Ingredients:

  • 1 cup (226g) 2% or Full-Fat Cottage Cheese (blended smooth)
  • 1 cup (120g) Self-Rising Flour
  • 1 Large Egg (lightly beaten, for egg wash)
  • 1 Tbsp Everything Bagel Seasoning (or sesame/poppy seeds)

Instructions:

  1. Place the cottage cheese into a food processor and blend until completely smooth and creamy, resembling thick yogurt. Scrape down the sides as needed.
  2. In a large bowl, combine the smooth cottage cheese and the self-rising flour. Mix vigorously with a sturdy spoon or spatula until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead very gently for just 2–3 minutes until the dough comes together into a cohesive, slightly tacky ball. Do not overwork.
  4. Cover the dough ball loosely with a clean tea towel and let it rest at room temperature for 10 minutes.
  5. Divide the dough evenly into 6 portions. Roll each portion into a small log, then curve it into a ring shape, pinching the ends firmly together to seal the 'bagel'.
  6. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the shaped bagels onto the sheet, ensuring they have space.
  7. Lightly brush the tops and sides of the bagels with the beaten egg. Immediately sprinkle generously with the Everything Bagel Seasoning.
  8. Bake for 20–22 minutes, rotating the tray halfway through, until the bagels are puffed, golden brown, and sound slightly hollow when tapped.
  9. Transfer the baked bagels to a wire rack immediately and allow them to cool completely before slicing and serving.
