Ingredients:
- 10 oz (280g) frozen chopped spinach, thawed and squeezed dry
- 1/4 cup (60ml) yellow onion, finely minced
- 1 clove (5g) garlic, minced
- 1 cup (100g) stuffing mix or seasoned breadcrumbs
- 1/2 cup (50g) grated Parmesan cheese
- 1 large (50g) egg, beaten
- 2 tbsp (28g) unsalted butter, melted
- 1/2 tsp (2g) garlic powder
- 1/2 tsp (1g) Italian seasoning
- 1/4 tsp (1g) black pepper
- Pinch (0.5g) of salt
Instructions:
- Preheat your oven to 350°F (175°C).
- Place thawed spinach in a kitchen towel and wring it out thoroughly until no more liquid drips.
- In a large bowl, combine the squeezed spinach, minced onion, and minced garlic.
- Fold in the stuffing mix, Parmesan cheese, beaten egg, and melted butter.
- Stir in the garlic powder, Italian seasoning, black pepper, and salt until the mixture is uniform and holds together.
- Line a baking sheet with parchment paper.
- Using a small cookie scoop or tablespoon, form the mixture into 1-inch balls and space them evenly on the baking sheet.
- Bake for 15–20 minutes, or until the edges are mahogany-colored and the balls feel firm to the touch.
