Ingredients:

  • 10 oz (280g) frozen chopped spinach, thawed and squeezed dry
  • 1/4 cup (60ml) yellow onion, finely minced
  • 1 clove (5g) garlic, minced
  • 1 cup (100g) stuffing mix or seasoned breadcrumbs
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 large (50g) egg, beaten
  • 2 tbsp (28g) unsalted butter, melted
  • 1/2 tsp (2g) garlic powder
  • 1/2 tsp (1g) Italian seasoning
  • 1/4 tsp (1g) black pepper
  • Pinch (0.5g) of salt

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Place thawed spinach in a kitchen towel and wring it out thoroughly until no more liquid drips.
  3. In a large bowl, combine the squeezed spinach, minced onion, and minced garlic.
  4. Fold in the stuffing mix, Parmesan cheese, beaten egg, and melted butter.
  5. Stir in the garlic powder, Italian seasoning, black pepper, and salt until the mixture is uniform and holds together.
  6. Line a baking sheet with parchment paper.
  7. Using a small cookie scoop or tablespoon, form the mixture into 1-inch balls and space them evenly on the baking sheet.
  8. Bake for 15–20 minutes, or until the edges are mahogany-colored and the balls feel firm to the touch.
