Ingredients:
- 4 medium tilapia fillets (approx. 450 g), fresh or fully thawed, skin off
- 1 tsp fine sea salt or kosher salt
- ½ tsp freshly cracked black pepper
- 2 Tbsp Extra Virgin Olive Oil
- 1 Tbsp unsalted butter, melted (optional, for richness)
- 3 cloves fresh minced garlic
- 1 tsp lemon zest (zest of one small lemon)
- 1 tsp dried dill
- ½ tsp dried thyme
- ½ tsp smoked paprika
- 2 Tbsp fresh lemon juice (saved for finishing)
Instructions:
- Preheat Oven: Set the oven temperature to 400°F (200°C). Line a 9x13 inch baking tray with parchment paper or aluminium foil.
- Prepare the Tilapia: Thoroughly pat the tilapia fillets dry using kitchen paper to remove surface moisture. Place the dried fillets evenly spaced on the prepared baking tray. Season both sides of the fillets lightly with the salt and black pepper.
- Create the Herb & Garlic Basting: In a small bowl, combine the olive oil, melted butter (if using), minced garlic, lemon zest, dried dill, dried thyme, and smoked paprika. Stir well until fragrant. Spoon or brush the herb mixture evenly over the top surface of the tilapia fillets.
- Bake the Fish: Place the tray into the preheated oven. Bake for 12 to 15 minutes. The fish is done when it is opaque throughout and flakes easily with a fork (internal temperature should reach 145°F / 63°C).
- Finish and Serve: Carefully remove the tray from the oven. Squeeze the reserved fresh lemon juice over all four fillets immediately upon removal. Allow the fish to rest on the tray for 1-2 minutes before plating.
