Ingredients:
- 1 cup Water (for syrup)
- 1 cup Granulated Sugar
- 4 large Fresh Ripe Peaches, peeled and pitted
- 1 cup Fresh Lemon Juice
- 4 cups Cold Water (or Sparkling Water)
- Peach Slices for garnish
- Lemon Wheels for garnish
Instructions:
- Make the Simple Syrup: Combine water and sugar in a saucepan. Heat gently, stirring until all sugar is completely dissolved. Remove from heat and allow to cool slightly.
- Prepare the Peaches: Roughly chop the peeled and pitted peaches. Place chopped peaches into the blender.
- Purée: Pour about half of the warm simple syrup (approx. 1/2 cup) over the peaches. Blend until completely smooth.
- Strain (Recommended): Pour the peach mixture through a fine-mesh sieve into a large bowl, pressing down on the solids with a spatula to extract all the liquid. Discard the pulp solids.
- Combine Base: In the large pitcher, combine the strained peach liquid, the freshly squeezed lemon juice, and the remaining simple syrup. Stir well.
- Dilute and Chill: Add the 4 cups of cold water to the pitcher. Stir everything together thoroughly. Taste and adjust sweetness or tartness as needed.
- Serve: Chill for at least 30 minutes for optimal flavour blending. Serve over plenty of ice, garnishing each glass with fresh peach slices and a lemon wheel.
