Ingredients:
- 1 cup (250g) creamy peanut butter
- 1/4 cup (57g) unsalted butter, softened
- 2 cups (240g) confectioners' sugar, sifted
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup (15g) crispy rice cereal
- 1.5 cups (255g) semi-sweet chocolate chips
- 1 tbsp (12g) coconut oil or vegetable shortening
Instructions:
- In a large mixing bowl, beat the softened butter and peanut butter together using an electric mixer until smooth and aerated. Add the vanilla extract and salt.
- Gradually incorporate the confectioners' sugar one cup at a time on low speed until a thick, pliable dough forms. Fold in the crispy rice cereal by hand if using.
- Scoop approximately 1 tablespoon of dough and roll into 1-inch balls. Place on a parchment-lined baking sheet and freeze for 20-30 minutes until firm.
- Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth and glossy.
- Using a toothpick, dip each chilled ball into the chocolate coating. Place back on the parchment paper and let the chocolate set completely before serving.
