Ingredients:

  • 1 cup (250g) creamy peanut butter
  • 1/4 cup (57g) unsalted butter, softened
  • 2 cups (240g) confectioners' sugar, sifted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup (15g) crispy rice cereal
  • 1.5 cups (255g) semi-sweet chocolate chips
  • 1 tbsp (12g) coconut oil or vegetable shortening

Instructions:

  1. In a large mixing bowl, beat the softened butter and peanut butter together using an electric mixer until smooth and aerated. Add the vanilla extract and salt.
  2. Gradually incorporate the confectioners' sugar one cup at a time on low speed until a thick, pliable dough forms. Fold in the crispy rice cereal by hand if using.
  3. Scoop approximately 1 tablespoon of dough and roll into 1-inch balls. Place on a parchment-lined baking sheet and freeze for 20-30 minutes until firm.
  4. Melt the chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth and glossy.
  5. Using a toothpick, dip each chilled ball into the chocolate coating. Place back on the parchment paper and let the chocolate set completely before serving.
