Ingredients:

  • 1 small red onion or half a large one, sliced thinly
  • Juice of half a lemon
  • ½ cucumber, cut into half moons
  • 12 cherry tomatoes, halved
  • 12 Kalamata olives
  • 2 tablespoons olive oil
  • Salt
  • Pepper
  • 2 teaspoons oregano
  • 100 g feta cheese, cubed

Instructions:

  1. Place thinly sliced red onions in a serving bowl and drizzle with lemon juice. Mix lightly and let sit for 5 minutes to mellow the flavor.
  2. Prepare cucumber, cherry tomatoes, olives, and feta cheese while the onions marinate.
  3. After 5 minutes, add cucumber, tomatoes, olives, olive oil, salt, pepper, and oregano to the bowl. Mix gently.
  4. Scatter cubed feta on top of the salad, drizzle with a little extra olive oil, and sprinkle with additional oregano.
