Ingredients:
- 1 small red onion or half a large one, sliced thinly
- Juice of half a lemon
- ½ cucumber, cut into half moons
- 12 cherry tomatoes, halved
- 12 Kalamata olives
- 2 tablespoons olive oil
- Salt
- Pepper
- 2 teaspoons oregano
- 100 g feta cheese, cubed
Instructions:
- Place thinly sliced red onions in a serving bowl and drizzle with lemon juice. Mix lightly and let sit for 5 minutes to mellow the flavor.
- Prepare cucumber, cherry tomatoes, olives, and feta cheese while the onions marinate.
- After 5 minutes, add cucumber, tomatoes, olives, olive oil, salt, pepper, and oregano to the bowl. Mix gently.
- Scatter cubed feta on top of the salad, drizzle with a little extra olive oil, and sprinkle with additional oregano.
