Ingredients:
- 1 small white onion (or 4 spring onions) - finely chopped
- 1 garlic clove - minced
- 2 ripe avocados - peeled, pitted, and roughly chopped
- ½ chili (or more, if you like it hotter!) - deseeded and minced
- 15 g fresh coriander (about ½ cup loosely packed) - chopped
- 1 small handful cherry tomatoes - quartered
- 1 lime - juiced
- Salt & pepper - to taste
Instructions:
- Peel and roughly chop the onion and garlic.
- Peel the avocados, remove the pit, and chop the flesh roughly.
- Remove the seeds and membranes from the chili and chop roughly.
- In a blender, combine the chopped onion, garlic, avocado, chili, coriander, cherry tomatoes, and lime juice.
- Add salt and pepper.
- Blitz the mixture until smooth.
- If needed, taste and adjust the seasoning with additional salt, pepper, chili, or lime juice.
- Spoon the guacamole into a large serving bowl.
