Ingredients:

  • 1 small white onion (or 4 spring onions) - finely chopped
  • 1 garlic clove - minced
  • 2 ripe avocados - peeled, pitted, and roughly chopped
  • ½ chili (or more, if you like it hotter!) - deseeded and minced
  • 15 g fresh coriander (about ½ cup loosely packed) - chopped
  • 1 small handful cherry tomatoes - quartered
  • 1 lime - juiced
  • Salt & pepper - to taste

Instructions:

  1. Peel and roughly chop the onion and garlic.
  2. Peel the avocados, remove the pit, and chop the flesh roughly.
  3. Remove the seeds and membranes from the chili and chop roughly.
  4. In a blender, combine the chopped onion, garlic, avocado, chili, coriander, cherry tomatoes, and lime juice.
  5. Add salt and pepper.
  6. Blitz the mixture until smooth.
  7. If needed, taste and adjust the seasoning with additional salt, pepper, chili, or lime juice.
  8. Spoon the guacamole into a large serving bowl.
