  1. Preheat oven to 400°F (200°C/Gas Mark 6). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the self-rising flour and Greek yogurt. Mix with a spoon until a rough, shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface. Knead gently for just 1 minute until it comes together into a smooth ball. Do not overwork the dough.
  4. Roll the dough out very thinly—aim for about 1/8 inch (3mm) thickness. The thinner they are, the crispier the chips will be.
  5. Use a pizza cutter or sharp knife to slice the dough into desired chip shapes (triangles or strips).
  6. If using toppings, lightly brush the tops of the chips with a tiny amount of olive oil (optional) and sprinkle evenly with the oregano, garlic powder, pepper flakes, and Parmesan cheese.
  7. Arrange the chips on the prepared baking sheet, ensuring they do not overlap. Bake for 12–15 minutes.
  8. Chips are done when they are puffed slightly, golden brown around the edges, and feel firm to the touch. Start checking at the 10-minute mark.
  9. Transfer the chips to a wire rack immediately to cool completely. They will crisp up further as they cool down.
