Instructions:
- Preheat oven to 400°F (200°C/Gas Mark 6). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the self-rising flour and Greek yogurt. Mix with a spoon until a rough, shaggy dough forms.
- Turn the dough out onto a lightly floured surface. Knead gently for just 1 minute until it comes together into a smooth ball. Do not overwork the dough.
- Roll the dough out very thinly—aim for about 1/8 inch (3mm) thickness. The thinner they are, the crispier the chips will be.
- Use a pizza cutter or sharp knife to slice the dough into desired chip shapes (triangles or strips).
- If using toppings, lightly brush the tops of the chips with a tiny amount of olive oil (optional) and sprinkle evenly with the oregano, garlic powder, pepper flakes, and Parmesan cheese.
- Arrange the chips on the prepared baking sheet, ensuring they do not overlap. Bake for 12–15 minutes.
- Chips are done when they are puffed slightly, golden brown around the edges, and feel firm to the touch. Start checking at the 10-minute mark.
- Transfer the chips to a wire rack immediately to cool completely. They will crisp up further as they cool down.
