Ingredients:
- 6 Large Eggs
- 1 cup Liquid Egg Whites
- 0.5 tsp Sea Salt
- 0.25 tsp Black Pepper
- 0.5 tsp Garlic Powder
- 2 cups Fresh Baby Spinach, chopped
- 6 Whole Wheat English Muffins, split
- 6 slices Lean Turkey Sausage Patties (approx. 180g)
- 6 slices Sharp Cheddar Cheese (approx. 120g)
- 1 tbsp Butter
Instructions:
- Pre-heat oven to 350°F (175°C) and line a 9x13 inch rimmed baking sheet with parchment paper.
- In a large mixing bowl, whisk the whole eggs, liquid egg whites, sea salt, black pepper, and garlic powder until frothy. Fold in the chopped baby spinach.
- Pour the egg mixture into the prepared baking sheet. Bake for 12–15 minutes until the center is set and the surface is matte.
- While eggs bake, lightly toast the English muffins until golden brown and crisp to create a moisture barrier.
- Sear the turkey sausage patties in a skillet over medium heat until browned and fully cooked.
- Once the egg slab is slightly cooled, use a 3-inch round cutter to stamp out 6 egg circles.
- Assemble the sandwiches by placing an egg circle, a sausage patty, and a slice of cheese onto each toasted muffin. Optional: Place back in the warm oven for 2 minutes to melt the cheese.
