Ingredients:

  • 6 Large Eggs
  • 1 cup Liquid Egg Whites
  • 0.5 tsp Sea Salt
  • 0.25 tsp Black Pepper
  • 0.5 tsp Garlic Powder
  • 2 cups Fresh Baby Spinach, chopped
  • 6 Whole Wheat English Muffins, split
  • 6 slices Lean Turkey Sausage Patties (approx. 180g)
  • 6 slices Sharp Cheddar Cheese (approx. 120g)
  • 1 tbsp Butter

Instructions:

  1. Pre-heat oven to 350°F (175°C) and line a 9x13 inch rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, whisk the whole eggs, liquid egg whites, sea salt, black pepper, and garlic powder until frothy. Fold in the chopped baby spinach.
  3. Pour the egg mixture into the prepared baking sheet. Bake for 12–15 minutes until the center is set and the surface is matte.
  4. While eggs bake, lightly toast the English muffins until golden brown and crisp to create a moisture barrier.
  5. Sear the turkey sausage patties in a skillet over medium heat until browned and fully cooked.
  6. Once the egg slab is slightly cooled, use a 3-inch round cutter to stamp out 6 egg circles.
  7. Assemble the sandwiches by placing an egg circle, a sausage patty, and a slice of cheese onto each toasted muffin. Optional: Place back in the warm oven for 2 minutes to melt the cheese.
